Nothing boring about these vanilla cupcakes!

These are three differently decorated versions of the classic Vanilla cupcake. Made with organic eggs, real butter, and Madagascar Bourbon vanilla extract, topped with a light vanilla buttercream and either mini-marshmallows, rainbow sprinkles or dolly mixture sweets (brought specially from England), they are anything but plain or ordinary.

We’re eating these with coffee in the morning, tea in the afternoon, and if I’m honest, with a sneaky glass of milk just before bed as well. As with the Sticky Toffee cupcakes, the final product will be about 25% deeper once my new cupcake cases arrive next week.
