How high do you like your meringue?

Today’s cupcake was Lemon Meringue and whilst I’ll definitely increase the lemoni-ness in the next batch, I was really pleased with how the Italian meringue topping came out.

The sponge base is flavoured with freshly-grated lemon zest, and then hollowed out and stuffed with a generous spoonful of lemon-curd (I used shop-bought today but will be making my own fresh home-made curds when we go into production).

There was way too much meringue mix but I piled it as high as I dared before breaking out the blow-torch.
